You may have noticed during Mid-Autumn Festival that lotus paste and white lotus paste mooncakes are the most commonly offered flavour. Apart from their colour, what are the differences between them? Lotus paste and white lotus paste are made with the same ingredient - the lotus seed. Upon harvesting, the lotus seed has a reddish outer layer which when turned into paste, gives the reddish hue you find in your lotus paste. White lotus paste however, goes through an additional process that removes this outer layer, resulting in a lighter colour. White lotus paste has a smoother and waxier texture compared to the regular lotus paste. Try them out for yourself!
