As part of this year’s Singapore Food Festival, National Kitchen by Violet Oon Singapore has specially curated a menu to celebrate the nation’s rich culinary culture, available from 27 August to 12 September. Calling upon time-honoured recipes that recall the warm homely flavours, this special menu features traditional dishes that celebrate our heritage. Transport yourself back in time with our version of Buah Paya Masak Titek. A robust flavoured soup made with young unripe papaya, it’s packed with umami flavours from simmering salted ikan kurau with pan-roasted white peppercorns and a special titek spice that imparts just the right amount of heat and fragrance. Reminisce and recall fond childhood memories of communal family meals with dishes like the Nangka Gulai, a light, creamy curry where generous portions of chicken are cooked in a flavourful mix of young jackfruit, spices, and coconut milk, and the Kledek Masak Lemak, sweet potatoes cooked with sweet potato leaves in light coconut gravy — both dishes that celebrate the simplicity of farm fresh ingredients.
