Which is why it is ever so important to read what is on the ingredients label to know what goes into your foods! At Bud Of Joy, none of our breads go through industrial processing. Our whole grains need to be soaked for 24hrs before we can make into dough. And the dough goes through for another 24hrs of slow proofing before being baked. (This is why we require you to order 3 days in advance). Here, organic grains carefully and we have them freshly milled using a stone miller so that our breads have no rancid aftertaste. They are 100% wholegrain (not 30% wholegrain) and yet have a soft texture and taste, with NO additives added. Long fermentation does wonders as the natural flavours of our organic grains are being brought out naturally. So next time you go shopping, take some time to look at the ingredient list, at what goes into your food.
