FIRST: - Melt 1 tablespoon butter in a large skillet over medium high heat. - Add scallops to the skillet to cook for 1-2 mins until golden brown. - Flip once and cook on the other side (the center remains translucent). - Remove scallops and melt 2 tablespoons butter in the same skillet. Sauce 1: LEMON BUTTER SAUCE - Add 4-5 cloves of minced garlic and lightly stir fry - Remove pan (skillet) from the heat; stir in 1 tablespoon lemon juice; season with salt and pepper, to taste. Sauce 2: CREAMY GARLIC SAUCE - Add 4-5 cloves of minced garlic and lightly stir fry - Pour in 1/4 cup dry white wine, like Sauv Blanc or Pinot Grigio (optional) and simmer for around 2 minutes or until wine reduces by half. - Add 1 cup heavy cream and simmer until slightly thickened. - Remove pan (skillet) from the heat; stir in 1 tablespoon lemon juice; season with salt and pepper, to taste. Finally, add the scallops back into the pan to warm through slightly and garnish with parsley. Voila!
