The crowd favourite will be Chef James’s signature ‘Sang Mein’ ($48). A twist on the classic noodles as Chef uses capellini pasta drizzled in truffle oil and topped with tiger prawns. Served in a casserole, the noodles have soaked in crustacean oil which enlivened the flavours. Another personal favourite of mine will be the crispy Thunderclap Roti Prata ($12).
