The iconic Singapore Sling cocktail was invented by Hainanese bartender Ngiam Tong Boon in 1915 at the Raffles Hotel. To accompany our spice-inflected dishes, our interpretation of this pink-tinged tipple uses a housemade pineapple puree with orange curacao, cherry brandy, DOM, and a special blend of fresh local fruits bursting with fresh citrus flavours. An ideal cocktail to order with spicy meals, the acidity of the fruits cuts through the richness to balance the different flavours.
