You say Tuesday, I scream chocolate! Let's learn to make molten chocolate cake as an after-work dessert 🍫 🥣 Ingredients: [A] 90g Milk chocolate [A] 45g Whipping cream [B] 30g Milk chocolate [B] 20g Unsalted butter 10g Cake flour 10g Cocoa powder Egg yolk 1.5nos (about 30g) Egg white 1.5nos (about 50g) 20g Caster sugar 1. Place [A] and [B] in a 50-60°C double boiler and melt the chocolate. Then set it aside to cool. 2. Sift the cake flour and cocoa powder. 3. Pour the ganache [A] in the mold (with cling wrap) and let it chill in the freezer to set (~10 min). 4. To make the cake batter, mix the egg yolk in a bowl with the chocolate mixture [B]. 5. In a separate bowl, beat the egg white till foamy. Add in the sugar in 2-3 additions and beat till stiff peak. 6. Add the sifted flour mixture to the chocolate mixture (step 4) and mix well. 7. Add the meringue to the chocolate mixture and fold it till evenly incorporated. 8. Pour the batter to fill up half of the mold. Add in the chilled ganache and pour the remaining batter to fill up 80% of the mold. 9. Bake in the oven (electronic oven: 180°C for about 15min / gas oven: 170°C about 15min) 10.
