Our Pan-seared Glarcier 51 Toothfish dish is a variation of one of the competition dishes by the Singapore National Culinary Team at the Culinary World Cup. This toothfish is paired with carrot purée, crispy white kombu, and seaweed crisps at the side. Topped with caviar vinaigrette which comprises Ikura, N25 caviar, finger lime, and chives. Finished off with crustacean cream with oil made of chive, carrot, and prawn, giving it additional colours to the dish.
