Ingredients: 1/2 tsp cinnamon powder 1 tsp chilli powder 1 tbsp olive oil, divided 2 cups MARIGOLD PowerBeans Almond Fresh Soya Milk 200g curry paste 150ml tomato paste 1 kg chicken breast, cut into 2cm cubes Salt and pepper, to your preference Parsley, to garnish Directions: Heat 1/2 tbsp olive oil in a large saucepan over medium-high heat. Add the chicken and season with salt and pepper to taste. Cook for 5 minutes, and once golden, remove and set aside. Add remaining 1/2 tbsp olive oil to the saucepan and add curry paste. Stir to combine, and cook for 2 minutes or until fragrant. In a separate bowl, combine tomato paste, ground cinnamon, chilli powder and MARIGOLD PowerBeans Almond Fresh Soya Milk. Add the soya milk mixture into the pan, stir to combine. Return chicken to the saucepan and stir to coat. Reduce heat to medium-low and cook for 15 minutes, or until curry sauce is thickened and chicken is cooked thoroughly. Garnish with parsley. Enjoy!
