Thank you everyone for tuning in yesterday for our 桃课 LIVE Series #2. As promised, below is the recipe for our Fried Rice with Fresh Crab Meat, Egg White and Dried Scallop 🦀 Prep: 15mins Cook: 15mins Total: 30mins Servings: 3-4 Persons Main Ingredients • 600g White Rice • 6 Japanese Scallops (Roasted & Steamed) • 100g Crab Meat • 50g Egg Whites • 50g Kailan stalk (chopped) Seasoning • 2 teaspoon Chicken Stock • 2 tablespoon Scallop stock • 1 teaspoon Fish Sauce • Salt for flavouring • Spring onion Step 1: Heat pan with oil with medium heat. Add in egg whites and fry for 2-3 minutes. Step 2: Drain oil from egg whites and set aside. Step 3: Stir-fry blanched scallops for 2-3 minutes. Add in crab meat. Stir-fry for another 3 minutes. Set aside. Step 3: Heat pan with 2 tablespoon of oil and add in white rice. Stir-fry for 3-4 minutes. Step 4: Add in 2 teaspoon of chicken essence. Add in scallop and crabmeat mixture (from Step 3), Kailan stalk, fish sauce and scallop stock. Step 5: Garnish with roasted scallops and spring onions. Prepare to serve.
