Did you know – only a specific shoulder cut of Spanish Iberico Pork (only about 20cm long) is used at Shang Palace for our Signature Iberico Char Siew? Each cut offers only 8 slices. This particular cut is prized for the fat which is interspersed in the meaty parts of the cut, which results in a perfectly bouncy texture after the roast.
